Pesto has always been my favorite pasta sauce. I am amazed at how easy it is to make it myself at home. Any blender will work, but in this case, I used my Vitamix.
There are many variations of vegan pesto. Today I’d like to share my personal favorite pesto recipe.
1/2 cup of water
2 cloves garlic
1 tablespoon nutritional yeast
Juice from 1/4 lemon
1/4 cup raw pecans
As many basil leaves as you can get into the blender
Blend at medium speed for just a minute or two.
Use this sauce with your favorite pasta, rice, pizza or as a salad dressing!
Tonight I sautéed eggplant, shitake mushrooms, and broccoli Rabe. I also cooked a pot of brown rice and red quinoa. I’ll layer them on my dish and dress with the pesto sauce then garnish with sliced tomato and green onions.
