Plantastic Salsa & Guacamole


While adzuki beans are cooking in one pot and brown rice is cooking in another, put together the following recipes…

Simple and delicious salsa

4 Roma tomatoes, diced
4 green onions, sliced
1/2 cup of chopped cilantro
Juice from 1/2 lemon
1/2 teaspoon of cumin powder
Salt to taste
Mix all ingredients in a bowl

Easy and yummy guacamole

3 ripe avocados, smashed with a fork
Juice from 1/2 of a lemon
Salt to taste
1/2 teaspoon of cumin powder
Mix all ingredients in a bowl

On your plate, layer the rice then the beans, then top with salsa and guacamole. I also like to sprinkle on some cayenne pepper for a little extra spice.
