The Perfect Salad

I think that late spring/early summer is the time of year for the most delicious salad you can eat. I think that it’s all of the fresh spring veggies that I gather out of my garden. Not just the lettuce that I plant or the chives that come up every year, but also the edible weeds that pop up. They are so full of flavor and nutrition!

Every evening at dinner time, we start our meal with a big, delicious salad. They consist of store bought and garden fresh ingredients.

Lately, my salads have consisted of…

Red and green leaf lettuce
Curly Kale (finely chopped)
Dandelion greens (and a few flower heads once in a while)
Chopped green chives
Purple chive flowers
Sliced red bell pepper
Carrots sliced by the vegetable peeler
Plantain leaves (weed in my garden)
Cucumber slices


1 cup of sesame seeds soaked overnight
Juice from 1/4 of a lemon
1 garlic clove (or more if you like garlic)
1 handful of parsley, chives or both
Himalayan salt to taste

Salads can be a work of art. Get creative and let me know what you like best in your salad and salad dressing!
