First cut eggplant into circles approximately 1/3 inch thick. Lay them down on a baking sheet (no need to grease.) When oven is heated to 350 degrees fahrenheit, bake the eggplant for 15 minutes.
While eggplant slices are baking, chop up chives, basil, oregano, and mushrooms. Use a veggie peeler to slice vegan cheese into thin slices or use graded vegan cheese.
When eggplant is ready, spoon a little tomato sauce onto each one then sprinkle the oregano. Next top with cheese, basil, chives, and mushrooms.
Bake again at 350 for another 15 minutes.
Let sit for 15 minutes before serving.
